Speedy Oatmeal

This is more
than just an oatmeal recipe. It is a system for putting together a
complete, healthy breakfast in just 7 minutes.

16 oz water
3 1/2 oz old
fashioned rolled oats
4 oz frozen
blueberries
4 oz frozen
raspberries
1 Tbsp flax
seed, ground
Turn burner on high so it will heat up while you get the water ready.
(This is not necessary if you have a gas range.)
In a small nonstick saucepan, weigh water. Put pan on burner, cover,
and bring water to a boil.
In your cereal bowl, weigh rolled oats.
When
water boils, remove lid and stir in oats. Reduce heat to
medium
and set a timer for 5 minutes. Cook uncovered, stirring occasionally.
Keep an eye on the pot so it doesn't boil over.
In your cereal bowl, weigh frozen blueberries and raspberries. Grind
flax seeds in a small coffee grinder. Sprinkle them over
the berries and brush out the grinder with a pastry
brush.
When
timer goes off, pour cooked oats into your cereal bowl on top of the
berries and flax seeds. The hot cereal will thaw the berries
and moisten the flax seeds.
Comments: There
is enough water in this recipe to make the oatmeal moist
without
milk. If desired, top it with a little non-dairy milk. You can use
other frozen fruit or sliced fresh fruit. You can use a few walnuts
instead of the flax seeds. To double the recipe, use a medium-sized pot
and reduce the amount of water a little.
