Mashed Sweet Potato Recipe

We always prepare this low fat sweet potato recipe for our holiday dinners. It contains only two ingredients and is super easy to make. We prefer orange sweet potatoes (often called yams) in this dish. White sweet potatoes, or even purple ones, work fine too. Weigh the sweet potatoes before you peel them.

The pineapple in these mashed sweet potatoes makes them moist and tangy.

34 oz sweet potatoes
8 oz canned crushed pineapple in juice

Peel sweet potatoes and cut into 1/2" slices. Steam until tender, about 25 minutes. See this page for instructions on steaming vegetables. Check the water level in your steamer pot after 10 or 15 minutes to be sure it has not evaporated completely. Test the sweet potatoes with a fork to be sure they are tender. Drain and transfer to a large wide bowl.

Add pineapple with juice to the hot cooked sweet potatoes and mash with a potato masher until well mixed.

Comments: This recipe for pineapple sweet potatoes serves 6 people. For a large group, use about 85 oz of sweet potatoes and a 20 oz can of pineapple.
