Chocolate Chip Cookies
12 big cookies
There are vegan chocolate chip cookies in the health food store that
contain almost 500 calories each. It is pretty dangerous to eat cookies
like that if you want to lose weight. We created this easy
recipe
for healthy chocolate chip cookies. Each big cookie
contains 163 calories, and is only 13% fat. And they are
delicious!

7 oz white whole wheat flour
2 oz cocoa powder
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
8 oz unsweetened applesauce
1 tsp vanilla
6 oz dates, pitted and quartered
12 oz banana chunks
2 oz vegan chocolate chips
Line two baking sheets with parchment paper.
Preheat oven to 350 degrees.
Into
a medium straight-sided bowl, sift white whole wheat flour, cocoa
powder, baking powder, baking soda, and salt. Add back any bran that
the sifter removes. We are making low fat, high fiber, 100% whole wheat
chocolate chip cookies. Stir the sifted ingredients thoroughly to mix.
Put applesauce and vanilla in a large straight-sided bowl.
In
a food processor, mix dates and bananas into a smooth paste. Stop to
scrape the sides and lid at least once. Add to the bowl of applesauce
and vanilla and stir together well.
Stir dry ingredients into wet. Do not overmix. Fold in vegan chocolate
chips.
Spoon
batter onto baking sheets into 3 oz patties, flattening each slightly.
The batter will be very sticky. Put 6 cookies on each sheet.
Bake for 8 minutes. Move bottom baking sheet to top shelf of
oven, and vice versa. Bake for 8 more minutes.
Allow
cookies to rest on the parchment paper for a few minutes, to relax
their grip on the paper. Then carefully remove them with a spatula.
Cool on a cooling rack.
Comments:
These are amazingly good date, applesauce, and
banana chocolate
chip cookies. You can hardly taste the fruit in them. Feel free to
substitute carob powder and/or carob chips for the chocolate.
Make
these cookies smaller if you prefer. If you use 2 oz of batter for each
cookie, the recipe yields 18 cookies at 109 calories each.
The cookies freeze well. Cool completely, then wrap individually in
plastic wrap. Freeze in a covered container.
If you don't have any vegan chocolate chips, you can use 2 oz chopped
nuts or dried cherries instead.
